The USDA rule is two hours: perishable food left at room temperature longer than that should be tossed, and the window shrinks to one hour when it is hotter than 90 degrees, think a summer picnic or a hot car. The reason is the danger zone, 40 to 140 degrees Fahrenheit, where bacteria like Salmonella and Staph multiply fast, doubling in as little as 20 minutes, quietly turning a safe plate into a risky one without changing how it looks or smells.

That last point is the one people get wrong: the bacteria that cause foodborne illness, and the toxins some of them leave behind, are often odorless and tasteless, so smelling or tasting to check is not a safety test, it is a gamble. Reheating does not reliably fix it either, since some toxins survive cooking temperatures. The safe habits are boring: refrigerate leftovers within two hours, keep hot food above 140 and cold food below 40, and when a dish has been out too long or you are unsure, discard it, because a wasted meal costs far less than food poisoning.
