Two details people get wrong. First, reheating does not reset the clock; heat kills bacteria but not the toxins some of them leave behind. Second, the smell test is unreliable, because the pathogens that cause illness are mostly odorless. Food can smell fine and still be a bad night.

The escape hatch is the freezer: cooked chicken keeps quality there for two to six months and stays safe indefinitely. Get leftovers refrigerated within two hours of cooking, one hour if it is above 90 degrees out, and portion big batches shallow so they chill fast.
