Are fresh vegetables always better than frozen?
The assumption that fresh always wins does not survive the supply chain. Vegetables destined for freezing are typically harvested at peak ripeness and blanched and flash-frozen within hours, locking in their vitamin content at close to its highest point. Fresh produce, by contrast, is often picked before full ripeness so it survives shipping, then spends days or weeks in transit, on shelves, and in your fridge, steadily losing water-soluble vitamins like C and folate the whole time. Multiple studies comparing the two have found frozen vegetables matching or beating their fresh counterparts on key nutrients, especially when the fresh option is not truly fresh.
This does not make fresh bad, produce eaten soon after a local harvest, from a farmers market or your garden, is excellent, and some vegetables handle freezing better than others texturally. But it demolishes the guilt around the freezer aisle. Frozen vegetables are nutritionally legitimate, usually cheaper, available year-round, free of the rushed use-it-before-it-rots pressure, and a major weapon against the enormous amount of fresh produce Americans buy and throw away.
