Why does restaurant food taste better than what you cook?
The largest single factor is fat, and the quantities would alarm most home cooks. Restaurant vegetables are frequently finished with butter, sauces are enriched with cream or mounted with cold butter at the end, and pans are used with far more oil than a health-conscious home recipe specifies. Salt is the close second: professional cooks season at every stage rather than once at the end, which produces food that tastes seasoned throughout rather than salty on the surface. Acid is the third element home cooking most often lacks, since a squeeze of lemon or a splash of vinegar at the finish is standard professional practice and rarely appears in home routines.
Equipment explains most of the rest. Commercial ranges deliver far more heat than a residential burner, and a properly preheated professional flat-top or wok setup produces browning through the Maillard reaction that a home pan, cooled by crowded food, never achieves. Restaurants also do prep in advance, so ingredients hit the pan at the right temperature in the right order rather than being chopped while something burns. What transfers to a home kitchen: salt more and earlier, taste continuously and adjust, preheat the pan properly and do not crowd it, cook in batches, finish with acid and fat, and prep everything before turning on the heat. Those changes close most of the gap without buying anything.
Butter, salt, and heat, in that order. Restaurants use far more fat and salt than home cooks, and commercial equipment reaches temperatures a home range cannot, which is what produces browning that home versions never develop.
