Does it matter whether milk goes in the tea before or after?

George Orwell devoted part of a 1946 essay to insisting tea goes in first, and the Royal Society of Chemistry issued guidance in 2003 taking the opposite position, which is roughly the level of seriousness this debate has always carried. The chemistry favors milk first. When you pour hot tea onto a small quantity of cold milk, the first drops of milk hit near-boiling liquid and their proteins denature, changing texture and producing a scalded note. Adding hot tea to milk already in the cup raises the milk's temperature more gradually and keeps more protein intact.

The historical explanation for milk first is more interesting than the chemical one. Early European porcelain and cheaper earthenware could crack from thermal shock when hot tea hit cold china, so milk went in first as insurance. Fine bone china could take the heat, which meant pouring tea first quietly signaled that your cups were good enough to survive it, and the practice became a class marker in Britain that outlived the technical reason entirely. Two practical notes that matter more than the order: milk-first makes it harder to judge strength as you pour, which is why many people who care about the tea itself add milk last regardless, and none of this applies to tea drunk without milk, which is most tea consumed worldwide.
